Hygienic Heat Exchangers: Selection and Application in Food and Pharmaceutical
Heat exchangers in food, dairy, beverage and pharmaceutical industries must meet strict hygiene standards to prevent product contamination and bacterial growth, in addition to heat transfer performance. Wrong equipment selection can lead to product recalls and production shutdowns with huge losses.
1. Core Requirements of Hygienic Design
Surface Roughness
All product-contact surfaces must achieve:
- Food grade: Ra <= 0.8 um (electropolished)
- Pharmaceutical grade (GMP): Ra <= 0.5 um
- Biopharmaceutical: Ra <= 0.4 um
The smoother the surface, the harder for bacteria to attach and the more thorough the cleaning.
Dead-leg-free Design
The exchanger structure must have no dead corners, grooves or blind tubes where liquid can stagnate; otherwise cleaning fluid cannot reach and bacteria keep multiplying. Evaluation method: per 3A standard, all inner-surface connection radii R>=6mm, all piping connections self-draining angle >=1.5 degrees.

3. CIP/SIP Design Essentials
CIP (Clean-in-Place) standard flow:
- Water pre-rinse (5 min): flush residual product
- Alkali wash (0.5%-2% NaOH, 75-80C, 20 min): remove protein, fat
- Intermediate water rinse (5 min)
- Acid wash (0.5%-1.5% nitric acid, 65-70C, 15 min): remove scale and minerals
- Final water rinse (to pH 6.5-7.5)
SIP (Sterilize-in-Place): Hold 121C saturated steam for 30 minutes, or 130C steam for 15 minutes, to achieve sterilization. The exchanger design must ensure steam reaches all inner surfaces.
